Healthy Lychee Recipes

Lychee fruit has numerous benefits for your health and wellbeing. When added into recipes, lychee fruit provides your body with antioxidants and other healthy compounds.

Lychee and Lime Sorbet

This refreshing sorbet makes for the perfect fat-free dessert after any meal. This recipe serves 6 people but you can store the leftovers to eat later on as well. There are very few ingredients, making this recipe simple as well as healthy. 

Ingredients

For this recipe you will need:

  • 3 cans of lychee fruit 
  • 50 grams of granulated sugar
  • 1 egg white
  • 1 lime 

The recipe calls for canned lychee fruit that includes syrup. If this is not an option, you can use fresh lychee fruit. The syrup adds extra flavoring and helps the fruit break down in the processor. 

Steps to Make It

First, drain the syrup from two cans of lychee fruit into a pan. Add in the granulated sugar and dissolve it into the syrup over low heat. Bring the mixture to a boil for one minute. 

Set aside the syrup and sugar mixture. Add the lychee fruit into a food processor and process them until they are finely chopped. Pour in the juice from one lime and the syrup mixture. Keep the food processor on for this part. 

Once the mixture is combined, pour it into a container and freeze it for 6 hours. The mixture may not be perfectly smooth yet. 

Once the mixture is frozen solid, break up the mixture and add it back into the food processor. Add in one egg white and process it until the mixture is smooth and thick. Once it reaches your desired texture, freeze the mixture until it is time to serve it. 

To serve, scoop the mixture into serving glasses or bowls. You can add part of the remaining can of lychee fruit as a topping if you wish. 

Thai Lychee and Prawn Salad

If you are a seafood lover, you will love this Thai prawn and lychee salad. Prawns are very similar to shrimp in looks and taste. In Thailand, prawns are commonly farmed and harvested for Asian dishes. You can substitute the prawn with fresh shrimp in this recipe, although it may change the final flavor. 

Ingredients

This Asian-inspired salad calls for diverse ingredients that make a well-rounded, nutritious meal. If you have 30 minutes of prep time available, that is enough to make this Thai salad. Those with a strong preference for seafood will love this dish. 

For this salad, you will need:

  • 500 grams of large cooked prawns
  • 20 lychees, peeled, halved, and stoned
  • 150 grams of bean sprouts
  • Large handful of roasted peanuts, chopped
  • Sprinkle of crispy onions 
  • 1 red chili 
  • 1 tablespoon of brown sugar
  • 2 limes
  • 2 teaspoons of fish sauce

These ingredients make up the salad and the dressing. You can cook the prawns according to your preferences and seasoning. Make sure to cook them before you need to assemble the salad so that they are ready. 

For less heat, leave out the red chili from the dressing. 

Steps to Make It

First, make the dressing. Start by mashing up the red chili. Add the brown sugar, juice of 2 limes, and fish sauce to the mashed chili. Mix until smooth and thin (salad dressing consistency). Set aside the dressing. 

Add the cooked prawns, bean sprouts, lychees, and peanuts into a bowl. Add a sprinkle of crispy onions as a topping for the salad. Pour the dressing over the salad, toss, and enjoy!

This recipe is a diverse combination of sweet, spicy, and salty. Although there are quite a few ingredients, the salad is easy to assemble. This salad is a good option for easy family dinners or nutritious lunches. 

Sweet and Sour Lychee Meatballs

Fans of the sweet-and-sour flavor profile will love these lychee meatballs. With only 260 calories per serving, this dish will delight your taste buds without sacrificing your figure. This is a healthy dinner recipe that is satisfying and nutritious. 

Ingredients

For this recipe, you will need several ingredients. The meatballs, sauce, chopped ingredients, and garnish all require different ingredients. When combined as a meal, this dish is sure to satisfy your hunger for sweet and sour alike. 

To make the sweet and sour lychee meatballs, you will need:

  • 250 grams of minced pork or chicken
  • 2 cloves of garlic, minced
  • 1 egg yolk
  • 1 tablespoon of soy
  • 2 teaspoons of flour
  • 1-2 tablespoons of oil (for frying)
  • 2 tablespoons of white vinegar
  • 2 tablespoons of ketchup
  • 1 tablespoon of soy sauce
  • 2 teaspoons of brown sugar
  • 1 teaspoon of grated ginger
  • ¼ red bell pepper, chopped
  • ¼ yellow bell pepper, chopped
  • 8 lychees, halved
  • ¼ red onion, chopped
  • ½ carrot, thinly sliced
  • Chopped cilantro (optional)
  • Salt and pepper to taste

These ingredients will make the meatballs, sauce, additional vegetables, and the garnish if desired. 

Steps to Make It

Combine the pork or chicken, minced garlic, egg yolk, soy, and flour in a bowl. Mix well until the meat is sticky. Shape the meat into 1-inch meatballs. Set aside the meatballs. 

Mix the white vinegar, ketchup, soy sauce, brown sugar, grated ginger, salt, and pepper in a bowl. This will be the sauce for the dish. Set aside. 

Heat a pan on medium heat and add the desired amount of oil for frying the meatballs. Once heated, add the meatballs to the pan and fry until they are brown on all sides. Remove the meatballs from the pan and set aside. 

Add the red and yellow bell pepper, lychees, red onion, and carrot to the pan with additional oil. Fry these ingredients until you are satisfied with their consistency. Pour in the sauce and meatballs and heat all ingredients on low. 

Simmer the mixture for 4 minutes or until the sauce is thickened to your liking. Ensure that each meatball is cooked thoroughly. 

Serve on plates or bowls and garnish with cilantro if desired. Enjoy this delicious healthy lychee fruit meal!
