Spiced Lentil and Spinach Soup

  • 1 ½ cups lentils

  • Fresh lime juice

  • 12 oz. frozen spinach 

  • A pinch of flour

  • 2 teaspoons dried mint flakes or parsley

  • 1 ½ teaspoons cumin

  • 1 ½ teaspoons sumac

  • 1 ½ teaspoons coriander

Cook for five more minutes on high heat. Drop the heat setting to medium-low, cover your soup, and cook for another 20 minutes. You may need to add water, as the lentils can absorb it during the cooking process.

Serve your soup and garnish with the lime juice.
