6 Tasty Protein Cookie Recipes!

Cookies are great, but should they be eaten every day?  If they contain superfoods and protein then yes, we think they definitely should be!

With so many protein cookie recipes to choose from you may be feeling overwhelmed. Luckily we found six recipes that we are sure you will love.  

Try these 6 simple protein cookie recipes: 

1- Oatmeal Pumpkin

Want soft and chewy oatmeal cookies that are filled with fall flavors? These oatmeal pumpkin protein cookies will do the trick!

Mix together 1 cup of instant oats, 93grams of vanilla protein powder, 2 tsp of ground cinnamon, ¼ tsp ground nutmeg, ¼ tsp ground ginger, 1 ½ tsp baking powder, and ¼ tsp of salt in a medium bowl.

In a separate bowl, mix together 1 ½ tbsp. of coconut oil or unsalted butter, ¾ cup of pumpkin puree, and 1 tsp vanilla extract. Next, stir ½ cup of pure maple syrup into the wet mixture.

Stir the dry mixture into the wet mixture just until they are incorporated! Then fold in 2 tbsp. of dark chocolate chips and chill the dough for 30 minutes.

Preheat your oven to 325°F and line a baking sheet with parchment paper. Drop the cookie dough into 15 rounded scoops and bake at 325°F for 10-13 minutes.

2- Funfetti Protein Cookies

These funfetti cookies are both cute and healthy!

Start off by preheating your oven to 325°F and line a cookie sheet with parchment paper. In a large microwave-safe bowl, melt ½ cup of cashew butter. Add 2 Tbsp. of honey and 2 tsp of Organic butter extract into the cashew butter mixture and beat with an electric hand mixer until they are well combined.

Next, add in 1 large egg, ½ Cup Vanilla Whey protein powder, a pinch of salt, and 1/4tsp Baking soda. Stir this mixture until a wet dough is formed.

Pour 1/3 cup of rainbow sprinkles into a shallow plate.  Roll the dough into 1 Tbsp. sized balls and then roll the top half and sides into the sprinkles.  Bake for about 12-13 minutes.

3- Apple Cinnamon

Looking for a slightly healthier protein cookie? This one is perfect for you! Each cookie will cookie has 4g of protein and will only set you back 65 calories.

First, preheat your over to 350°F and line a baking sheet with parchment paper. Combine 1 ½ cups old fashioned rolled oats, ½ cup unsweetened apple sauce, ½ cup egg whites, 2 scoops of Vanilla protein powder, 1 diced medium apple, 1 Tbsp. of cinnamon and a pinch of salt in a bowl.

Once combined, scoop out 14 heaping spoonful’s of the mixture and place it on a lined baking sheet. Bake for 10-12 minutes or until the mixture is set. Let it cool for a few minutes and then add cinnamon.

4- Chocolate Peanut Butter

Peanut butter and chocolate are a dynamic duo that no one can resist and with this recipe, you don’t have too!

First, preheat your over to 350°F and spray a baking sheet with coconut oil cooking spray. Mix together 1 cup all-natural smooth peanut butter, ½ cup coconut palm sugar, ½ cup chocolate whey protein powder, 2 tablespoons cocoa powder, 2 large eggs, and 1/3 cup mini chocolate chips.

Next, spoon out 2 Tablespoons of dough into your palms and roll into a ball. Place on a cookie sheet and flatten. Bake at 350°F for 10-12 minutes. Makes sure to let these cool for 15 minutes before taking them off the pan!

5- Banana Chocolate Chip 

These are ultra-healthy protein cookies that are loaded with plant protein, vitamins, and minerals! Side note – you will need a food processor for this one.

Preheat your oven to 350°F and line a baking sheet with parchment paper. Add 1 cup of soft pitted dates and 1 large banana to your food processor and process until semi-smooth.

Next, add 1 cup of oats, 2/3 cup pumpkin seeds, ¼ cup dark chocolate chips, 2 tbsp. ground flaxseed, 2 tbsp. chia seeds, 2 tbsp. hemp hearts and ½ tbsp. coconut oil melted.

Process until all ingredients are well combined. Drop 25 heaping tablespoons of dough onto your cookie sheet. Bake for 10-13 minutes.
